Indonesian-Spiced Salmon with Freekeh & Marinated Radishes Recipe

This Indonesian-inspired dish features tender salmon fillets coated in aromatic spices, paired with nutty freekeh and tangy marinated radishes. It's a simple yet flavourful meal perfect for any day.

Ingredients:

  • 2 salmon fillets
  • 1 cup freekeh
  • 4-5 radishes, thinly sliced
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1/2 tsp paprika
  • Olive oil, for cooking
  • Fresh coriander or parsley, for garnish
  • Salt, to taste

Instructions:

  1. Cook Freekeh

    Rinse freekeh, then cook in simmering water for 20 minutes until tender. Drain and set aside.

  2. Marinate Radishes

    While freekeh cooks, thinly slice radishes and marinate in rice vinegar, honey, and salt for 10 minutes.

    Rub salmon fillets with a spice blend of coriander, cumin, turmeric, and paprika. Fry skin-side down in olive oil for 4-5 minutes, then flip and cook another 3-4 minutes.
