Grilled Seafood Skewers with Smoky Romesco Recipe

Ingredients:
- Prawns 200g, peeled and deveined
- Scallops 200g, cleaned
- Squid 200g, sliced into rings
- Olive oil 3 tbsp
- Paprika 1 tsp
- Lemon zest from 1 lemon
- Salt 1 tsp
- Black pepper 1/2 tsp
- Roasted capsicums 100g, chopped
- Almonds 50g
- Garlic 3 cloves
- Red wine vinegar 2 tbsp
- Parsley, chopped (for garnish)
Instructions:

1 Prepare Romesco Sauce
Blend roasted capsicums, almonds, garlic, and vinegar to form a smooth sauce.

2 Assemble Skewers
In a small bowl, mix olive oil, paprika, lemon zest, salt, and black pepper to create the seasoning. Brush the mixture onto prawns, scallops, and squid, then thread them onto skewers.
