Ingredients:

  • 500g seafood mix (prawns, scallops, fish fillets)
  • 2 potatoes, peeled and diced
  • 1 carrot, peeled and diced
  • 2 celery stalks, diced
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 600ml fish stock
  • 300ml cream
  • 2 tablespoons butter
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 2 tablespoons all-purpose flour
  • 1 medium leek, white and light green parts only, thinly sliced
  • 4-6 slices of bacon, chopped (optional)

Instructions:

    Separate the butter in half. Heat in a large pan, add bacon, and stir for 5 minutes over a low heat. Remove and set aside.
