Rustic Seafood Bisque Recipe

Ingredients:
- 2 tbsp olive oil
- 1 onion, diced
- 2 celery stalks, diced
- 2 carrots, diced
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 2 bay leaves
- 400g diced tomatoes
- 2 tbsp tomato paste
- 4 cups fish stock
- 1/2 cup white wine
- 300g prawns, peeled and deveined
- 300g scallops
- 300g firm white fish fillets, diced
- 1/2 cup thickened cream
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste

1 Prepare the Base
Heat olive oil in a large pot over medium heat. Sauté diced onion, celery, and carrots until softened. Add minced garlic, dried thyme, bay leaves, diced tomatoes, and tomato paste. Cook for 5-7 minutes until the mixture thickens and tomatoes break down.

2 Simmer with Broth and Wine
Pour in fish stock and white wine. Bring to a simmer and cook uncovered for 20 minutes to meld flavours together.

3 Cook the Seafood
Season prawns, scallops, and fish fillets with salt and pepper. Add them to the pot and cook for 5-7 minutes until seafood is cooked through and tender.

Stir in thickened cream and fresh parsley. Taste and adjust seasoning with salt and pepper if needed. Simmer for another 2-3 minutes until heated through. Ladle into bowls, garnish with parsley, and serve hot, optionally with crusty bread.
