Indulge in the rich flavours of this Rustic Seafood Bisque, a comforting dish that brings together the essence of Mediterranean cuisine with its blend of seafood, aromatic herbs, and creamy textures.

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 2 bay leaves
  • 400g diced tomatoes
  • 2 tbsp tomato paste
  • 4 cups fish stock
  • 1/2 cup white wine
  • 300g prawns, peeled and deveined
  • 300g scallops
  • 300g firm white fish fillets, diced
  • 1/2 cup thickened cream
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste

Instructions:

    Heat olive oil in a large pot over medium heat. Sauté diced onion, celery, and carrots until softened. Add minced garlic, dried thyme, bay leaves, diced tomatoes, and tomato paste. Cook for 5-7 minutes until the mixture thickens and tomatoes break down.
