Enjoy a special Valentine's Day dinner with this delicious baked salmon recipe, elegantly paired with asparagus and a flavourful tarragon dressing. This meal is perfect for a romantic evening, offering a combination of fresh, zesty flavours and a presentation that impresses.

Ingredients:

  • 4 salmon fillets
  • 4 lemon slices, plus extra for serving
  • 4 sprigs of thyme, plus extra for garnish
  • 5 teaspoons olive oil, divided
  • Salt and pepper, to taste
  • 4 30cm squares of baking paper
  • 1 bunch asparagus
  • 1 teaspoon mustard
  • 1 teaspoon dried tarragon
  • 1 tablespoon vinegar
  • 1 teaspoon sugar

Instructions:

    Preheat the oven to 220°C.

    Lay four 30cm squares of baking paper on two baking trays. Place a salmon fillet on each square, top with lemon slices and a thyme sprig. Drizzle each with 1 teaspoon of oil, season with salt and pepper. Fold the edges of the paper to form well-sealed parcels.

    Bake the parcels in the preheated oven for 15 minutes, or until the salmon is cooked through.
