Festive Miso-Glazed Tasmanian Salmon Recipe

The Tasmanian salmon is infused with rich umami flavours and adorned with festive garnishes like pomegranate seeds and fresh herbs. Ingredients:
- 4 x 150 g Tasmanian salmon fillets, skin-on
- 2 tbsp white miso paste
- 2 tbsp mirin
- 2 tbsp sake
- 1 tbsp sugar
- 1 tsp orange zest
- 1 tbsp pomegranate arils, for garnish
- 1 tsp sesame seeds, for garnish
- Fresh dill sprigs, for garnish
- Orange slices, for garnish
- Herbed couscous or quinoa, to serve
- Sautéed broccolini, to serve
Instructions:

1 Marinate the salmon
In a small bowl, mix miso paste, mirin, sake, sugar, and a touch of orange zest. Place the salmon fillets in a shallow dish and coat with the marinade. Cover and refrigerate for at least 30 minutes or overnight for maximum flavour infusion.

Preheat the oven to 200°C (180°C fan-forced). Line a baking tray with baking paper and arrange the salmon fillets, skin-side down. Bake for 12–15 minutes, or until cooked to your liking. Remove from the oven and sprinkle with sesame seeds and pomegranate arils for a festive touch.

Plate the salmon on a bed of herbed couscous or quinoa, surrounded by sautéed broccolini. Garnish with sprigs of dill and orange slices for a Christmas-themed presentation.
