Ingredients:
- 300g cod fillets
- 300g salmon fillets
- 1kg potatoes, peeled and chopped
- 2 tbsp butter
- 1/4 cup milk
- 1 cup grated cheese
- 2 tbsp plain flour
- 2 cups milk (for poaching)
- 1 tbsp Dijon mustard
- 2 tbsp fresh parsley, chopped
- Salt and pepper, to taste

1 Prepare the Fish and Potatoes
Preheat the oven to 200°C. Peel and chop the potatoes into chunks, then boil them in salted water until tender. Drain and mash the potatoes with butter, milk, and a pinch of salt. Meanwhile, poach the cod and salmon fillets in milk until just cooked through. Remove the fish from the milk, reserving the liquid, and flake the fish into bite-sized pieces.

2 Make the Sauce
In a saucepan, melt the butter over medium heat and stir in the flour to form a roux. Gradually add the reserved poaching milk, whisking continuously until smooth and thickened. Stir in the Dijon mustard and chopped parsley, and season with salt and pepper. Gently fold the flaked cod and salmon into the sauce.

Pour the fish and sauce mixture into a baking dish. Spoon the mashed potatoes over the top, spreading them evenly. Sprinkle the grated cheese over the mashed potatoes and bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the filling is bubbling.
