Savoury Thai Seafood Soup with Coconut and Lime Recipe

  • 2 makrut lime leaves
  • Garlic, minced, 4 cloves
  • Galangal, grated, 1 teaspoon
  • Thai bird chilies, sliced, 1 to 2
  • Mixed seafood (shrimp, mussels, scallops, squid), 4 cups
  • Tomato, 1 medium, thinly sliced
  • Baby bok choy, optional
  • Coconut milk, 7 ounces
  • Fish sauce, 2 tablespoons
  • Soy sauce, 1 tablespoon
  • Lime juice, 2½ tablespoons
  • Sugar, 1 teaspoon
  • Fresh cilantro, choppeda
